Brushwood is rightfully considered one of the traditional dishes of Russian cuisine, the preparation of which does not require professional culinary skills. Incredibly delicious cookies with a crispy crust will decorate any festive table and bring indescribable pleasure to both small sweet tooth and adult gourmets.
Ingredients and recommendations
Brushwood is considered exclusively a homemade dessert, so the products necessary for its preparation are available in every home:
- eggs - 4 pieces;
- granulated sugar - 1 tbsp. l;
- cow's milk - 50 ml;
- wheat flour - 500-600 grams;
- salt - 1/2 tbsp. l;
- vodka - 50 ml;
- vegetable oil - 2 tbsp. l;
- baking soda - 1/2 teaspoon.
Instead of soda, you can use a baking powder - in this case, the dough will turn out more airy. As a topping, it is recommended to use icing sugar, which will give the brushwood a unique taste of childhood.
Cooking technology
In a clean bowl, using an ordinary whisk, mix eggs, sugar and salt, pour in milk (it should be at room temperature), vodka and vegetable oil, and continue to beat until a homogeneous mass is obtained. Then baking powder and sifted flour are added. The dough for brushwood should turn out to be cool, soft and elastic, so if necessary, you can add flour in excess of the norm. The finished dough is covered with a towel or a bowl so that its surface is not weathered, and left to swell for about 30 minutes.
The dough is divided into small pieces, which are rolled into a thin layer using a wooden rolling pin. At this time, you can put a frying pan with a large amount of oil (deep-frying) on the fire so that it warms up to the desired temperature. Then cut into small strips, make an incision in the middle and give the liver the desired shape. In a boiling, but not red-hot vegetable oil, "workpieces" are lowered and fried until golden brown on both sides. Before serving, brushwood is sprinkled with powdered sugar.
